Ingredients
200g melted butter
200g caster sugar
200g self raising flour
½ tsp baking powder
4 eggs
grated lemon zest
fruit (tinned mango)
Sprinkle cinnamon
Dash of vanilla
Method
In a mixing machine combine all ingredients except the tinned mangoes.
Place the fruit in the bottom of the cake tin and pour the batter over the top.
Bake in a pre-heated oven at 180oC for 35-45 minutes.
