Almond and Cashew Biscotti

Ingredients

 
500g plain flour
400g caster sugar
2 tsp baking powder
6 eggs
2 tsp vanilla essence
350g mixed almonds & cashews (toasted and chopped)
 

Method

 
Mix together the flour, sugar and baking powder.
 
Whisk together the eggs and vanilla then gradually stir in the dry ingredients until a rough dough is formed then mix in the chopped nuts.
 
Gently knead the dough into 2 even sized loafs then place onto a baking paper lined oven tray and bake in a pre-heated oven at 180oC for 20-25 minutes
 
Remove from the oven and allow to cool before slicing into 2cm slices and baking for a further 15 minutes at 180oC.
