Ingredients
2 avocadoes
300g raw prawns
4 spring onions, finely chopped
1 clove of garlic, crushed
1 tbsp mustard
½ glass of white wine
50g butter
50g plain flour
500ml milk
2 tbsp chopped parsley
100g grated mozzarella
1 tbsp olive oil
Method
Cut the avocadoes in half and scoop out half the flesh.
Heat a fry pan add the olive oil and stir fry the prawns until they just turn pink, then remove from the pan and set aside.
Reheat the pan add the butter, spring onions, and garlic and cook for 2 minutes. Stir in the white wine and bring to a boil then add the mustard and flour and cook for another 3 minutes, then gradually stir through the milk until a nice smooth sauce is attained.
Stir in the cheese, parsley, prawns and chopped avocado flesh, then place 4 prawns in each half avocado cover with sauce and serve.
