Ingredients
300g cooked penne
6 egg yolks
200 ml cream
100 ml milk
6 rashers of bacon, sliced thin
200g button mushrooms, sliced
4 spring onions, sliced
2 cloves of crushed garlic
½ glass of white wine
2 tbsp chopped parsley
4 tbsp olive oil
150g grated cheese
Method
Heat a large fry pan add a splash of olive oil and fry the bacon, garlic and spring onions until the garlic is just starting to brown then pour in the wine and allow to boil.
Remove from the pan and allow to cool then mix together with the egg yolks, cream, milk salt and pepper and parsley, then fold in the cooked penne.
Pour the pasta and cream into a large baking dish, sprinkle with grated cheese and bake at 200oC for 20-30 minutes
