Ingredients
1 tbsp Peanut oil
250g Beef, sliced (scotch fillet)
1 Spanish onion
200g Greens
150g Mushrooms
2 Garlic cloves, crushed
Oyster sauce
Chicken stock
2 tbsp arrowroot, mixed in water
Method
Heat a wok and pour in half the oil, fry the beef in batches until just sealed then remove from the pan and set aside.
Re-heat the wok add the rest of the oil and toss in the mushrooms and cook until just starting to brown then add the garlic, onions and return the beef to the wok.
Pour in the oyster sauce and chicken stock, bring to a boil then stir in the mixed arrowroot, add the mixed greens to the wok and cook until thickened, serve with rice or noodles.
