Beer Battered Crab and Avocado Cakes

Ingredients

300g crab meat
3 spring onions chopped
2 egg yolks
100g cornflour
juice of 1 lemon
1 avocado, chopped

Beer batter
200ml beer
2 egg whites (lightly whisked)
250g flour
pinch of salt

Method

 
In a large bowl combine all the crab, onions, egg yolks, corn flour lemon juice and avocado to a firm mix and divide into 4 cm balls.
Mix together the batter ingredients until smooth
Dip each crab ball into the batter and deep fry until crispy and golden.
Serve with your choice of dipping sauce.
