Ingredients
200 g blue cheese
2 pears
2 eggs
80g walnuts
Filo pastry
100g Melted butter
100 ml cream
Method
Peel, core and finely dice tone of the pears then place them into a large mixing bowl with the 2 eggs and the cream, then crumble the blue cheese into the mix.
Lay one sheet of filo pastry on the bench, paint liberally with the melted butter and fold in half, then lay another sheet on top and brush with more butter and fold over again.
Press the pastry into your muffin tins, fill with the blue cheese mix and bake at 190oC for 15-20 minutes.
Garnish with thin slices of the second pear and a drizzle of olive oil.
