Ingredients
6 egg whites
200g caster sugar
500g vanilla ice cream
6 Jam rollettes
Method
Cut the Jam rollettes into 1 cm slices.
Place the egg whites into your mixer and whisk until semi stiff peaks are formed then gradually sprinkle in the sugar while still whisking until a smooth, stiff meringue is formed.
Pipe a 15 cm ring of meringue onto an oven proof plate, then place a “pile” of ice cream in the centre.
Lay the sliced jam rollettes around the ice cream then pipe the remaining meringue mix all over.
Either place the “bombe” under a hot grill, or torch with a hand held blowtorch until golden brown on the surface and serve immediately.
