Caesar Salad

Ingredients

 
1 cos lettuce
8 anchovy fillets, plus the oil from the can
6 slices of bacon, cut into 2cm wide batons
4 poached eggs
1 clove of garlic
4 drops of Worcester sauce
50g freshly grated parmesan
4 tbsp mayonnaise
1 cup of croutons
 

Method

 
Place the mayonnaise into your food processor, add the Worcester sauce, parmesan, anchovy oil, 2 anchovies and garlic clove then blend until smooth (add a couple of tbsp of water to thin down the sauce to your required consistency.
 
Fry the bacon in a hot pan until nicely browned.
 
Remove the large outer leaves from the lettuce and chop them into 2 cm pieces, then arrange the inner leaves around your serving plate.
 
Toss the chopped lettuce with the croutons, bacon and Caesar dressing then onto the serving plate, dress with the poached eggs, anchovy fillets and more dressing then serve.
