Ingredients
500g minced beef
1 brown onion, finely diced
1 clove of crushed garlic
1 carrot, grated
1 zucchini, grated
6 egg yolks
6 slices of bacon
Salt and pepper
Olive oil
Method
Heat a large fry pan and add a splash of olive oil, fry the onions, carrot, zucchini and garlic for 5-10 minutes, or until just starting to brown, stirring constantly.
Place the mince and caramelized veggies into a large mixing bowl with 2 of the egg yolks and massage together.
Lay the bacon in a long strip, overlapping onto a baking paper lined oven tray.
Place half the mince mixture on top of the bacon then place the remaining 4 egg yolks on top of the mince, then gently cover the egg yolks with the rest of the mince and fold the bacon over to form a bacon wrapped meatloaf.
Bake in an oven pre-heated to 190oC for 20-30 minutes and serve.
