Ingredients
300g roast lamb, cubed
1 brown onion, chopped
1 carrot,finely chopped
1 stick of celery,finely chopped
150g grated cheese
3 potatoes , cubed
olive oil
Pinch of salt
Pinch of white pepper
3 sheets of shortcrust pastry
1 egg
Method
Heat a large fry pan, add a splash of olive oil and quickly fry the potatoes, onions, carrot and celery until lightly softened.
Add salt and pepper to taste then stir in the roast lamb and cheese then allow to cool.
Place a large spoonful of lamb and vegetable mix into the centre of the pastry sheet and fold over, crimp the edges to form a crust then brush the surface with eggwash, a sprinkle of salt.
Bake in an oven at 190oC for 20 minutes
