Ingredients
500g spinach
1 brown onion finely diced
1 clove of crushed garlic
150g grated cheddar
150g grated mozzarella
12 Slices white bread (cut into star’s with pastry cutter)
50g butter
Splash of olive oil
Method
Place the onions into a fry pan with the half the butter and a splash of olive oil and fry then add the spinach and cook until the spinach wilts.
Remove from the pan and place into a bowl and allow to cool, then mix in the cheese.
Take the bread and spread with butter on 1 side then line your muffin tray with the slice to form a tart.
Fill with spinach and cheese mixture and bake at 190oC for 15 minutes or until the cheese is golden brown.
