Ingredients
2 chicken breasts
2 zucchini, thinly sliced, blanched
Method
Pre-heat oven to 220º
Baste the chicken breasts with oil and salt & pepper. Then seal on both sides in a hot fry pan.
Place a sheet of cling wrap on bench then weave the blanched zucchini slices to form a mat
Place the sealed chicken on top and fold over the edges to form basket.
Place in oven for 12-15 minutes
