Chicken Parmigiana

Ingredients

 
3 chicken breast trimmed
3 bacon rashers
30ml EVO
120g mozzarella cheese
 
For crumbing
200g plain flour
4 eggs
200g breadcrumbs
1 litre vegetable oil
150ml tomato concasse
 

Method

 
Butterfly the chicken breast, dust with flour, dip in eggs then breadcrumbs
 
Deep fry crumbed chicken breasts to golden brown
 
Cook bacon in frypan & heat tomato concasse
 
Put chicken on tray, spread tomato on chicken then bacon then some more tomato, lastly mozzarella
 
Slide under grill, melt cheese then serve
