Ingredients
2 Chicken breast
300g button mushroom
1 onion, finely chopped
1 clove of garlic
¼ cup chopped parsley
2 sheets puff pastry
100g grated cheese
4 tbsp. Olive oil
50g butter
1 egg (for eggwash)
Method
Heat a fry pan and add 1 tbsp olive oil then seal the chicken breast on both sides, remove from the pan and set aside.
Re-heat the fry pan add 2 tbsp of olive oil and the butter and fry the mushrooms until they just start to brown then add the onions and garlic and fry until softened, remove from the pan, set aside and allow to cool.
Once the mushroom mix has cooled stir through the cheese and place 2 tbsp of mix onto each sheet of pastry, place a chicken breast on top of each then another 2 tbsp of mushroom mix.
Fold over the edges of the pastry and seal with egg wash, baste the top of the pastries with egg wash and bake at 195oC for 15-20 minutes then serve immediately.
