Ingredients
4 Lamb fillets
120g breadcrumbs
100g flour
Eggwash (3 eggs, 150 ml of milk, this will be used for all my snitzels)
1 tsp dried chillies
2 cloves of chopped garlic
Salt and pepper
Method
Cut the lamb into 8 cm pieces then turn on its end and bash until nice and thin.
Add the chilli and garlic to the breadcrumbs, thoroughly mix through then pass the lamb through flour, egg then chilli spiced breadcrumbs.
Deep fry in hot oil for 3 minutes or until golden brown, and serve with a good dollop of mint pesto.
Mint pesto
1 bunch of mint ( leaves plucked off.)
2 tbsp pine cloves
1 clove of garlic
2 tbsp freshly grated parmesan
3 tbsp extra virgin olive oil.
Method
Place all ingredients into your food processor and blend until smooth, you can add a little more olive oil if you like.
