Chocanut Cupcake

Ingredients

 
4 eggs
100g raw brown sugar
1 cup of cocoa
½ cup chocolate chips
½ cup mixed nuts
150g almond meal
100g plain flour
 

Method

 
Whisk the eggs and sugar until light and fluffy.
 
Fold in all the other ingredients.
 
Pour the mixture into cupcakes and bake @ 190oC for 30-45 minutes.
 
Topping
 
250g cooking chocolate
100g un-salted butter
100ml cream
 

Method

 
Pace all ingredients into a saucepan and gently melt until all combined.
 
Allow to cool and spread on top of cooled cup cakes.
