Ingredients
2 chorizo, sliced to 1cm thick
2 eggs
100g self raising flour
1 red chilli, finely diced
1 clove of garlic, crushed
Salt and pepper
1 tbsp finely chopped chives.
1 tbsp olive oil
Method
Heat a fry pan, add a splash of olive oil and fry the chorizo both sides until crispy.
Mix together the flour, eggs, chilli, garlic, salt and pepper and chives until a batter is formed
Pour 2 tbsp of batter mix into your muffin tins and place a slice of chorizo into each one then bake in a pre-heated oven at 220oC for 8-12 minutes and serve immediately.
