Crumpets

Ingredients

 
300g “00” flour
1 tsp dried yeast
1 tsp sugar
1 tsp salt
400ml warm milk
¼ tsp bicarbonate soda
 

Method

 
Mix together all dry ingredients until combined.
 
Stir through the warm milk and mix until a smooth batter is formed.
 
Cover with cling wrap and place in a warm spot to “Prove” for 2 hours
 
Once the mix has bubbled up and doubled in size heat a non stick pan and spray with oil, place a pastry ring into the pan and fill with crumpet batter and cook until bubbles appear around the edges then flip and cook the other side until golden brown.
 
Serve with your choice of spread (jam/honey etc..)
