Ingredients
1kg baby calamari
500mls milk
2 cloves garlic chopped
300gms plain flour
2ltr canola oil
Method
1. Cut tubes into ½ cm rings keep tentacles, place in marinade of milk & garlic for at least 1 hr or over night
2. Lightly dust with flour & deep-fry @ 180 degrees Celsius
3. Drain on kitchen paper and serve immediately with lemon aioli, salad leaves and lemon wedge.

Lemon Aioli
Ingredients
2 egg yolks
250ml garlic infused olive oil
50ml lemon juice
Method
Carefully whisk garlic oil into yolks a little at a time then add a squeeze of lemon juice & salt & pepper
