Ingredients
2 whole eggs
25ml sesame oil
25 ml soy sauce
20g Enoki mushrooms
1 spring onion, finely shredded
1 carrot, julienne
3-4 coriander fronds
6 mint leaves
Method
Whisk the eggs together until smooth, pour half the sesame oil into the egg mix and the other half onto a hot flat grill.
Pour the egg mixture over the surface of the flat grill to from a large flat omelette.
Once the egg is spread over the surface and half cooked lay the carrots, spring onions, mushrooms and herbs on top, then pour over the soy sauce and roll up the omelette to enclose the filling and serve.
