FNQ Chicken

Ingredients

 
4 chicken drumsticks
4 chicken wings
1 tbsp Worcester sauce
1 tsp Tabasco
½ an onion, roughly chopped
1 clove of garlic
2 litres of water
2 mangoes
2 bananas
200g plain flour
1 tbsp turmeric
1 tsp cayenne pepper
A pinch of baking powder
500 ml water
 

Method

 
Place the chicken, Tabasco, Worcester sauce, garlic, onion and water into a large saucepan and cover with water, place on a lid, bring to a boil and turn down to a simmer for 15-20 minutes.
 
Remove the chicken from the pan and allow to cool.
 
Mix the cayenne, Tabasco and baking powder into the flour then whisk in up to 500 ml of water until a smooth batter is formed.
 
Cut the cheeks off the mangoes and slice them in half lengthwise, peel the bananas and cut in half lengthwise.
 
Dip the fruit in flour then dredge through the batter and deep fry at 180oC until golden brown and crispy.
 
Pass the cooled chicken through the flour then into the batter and deep fry at 180oC until golden brown.
 
Serve the chicken and fruit fritters with crisp greens.
