Ingredients
1 cup of cooked basmati rice
4 rashers of bacon, chopped into batons
1 red bullhorn chilli, sliced
1 Spanish onion, sliced
2 cloves of garlic, finely sliced
1 Zucchini, sliced
1 Carrot, sliced
150 g baby spinach
1 cup of frozen peas
50 ml soy sauce
20 ml Worcester sauce
2 eggs, beaten
Sesame oil
Method
In a hot wok cook the beaten eggs until a large flat omelette is formed, remove from the pan and set aside
Re-het the wok add a splash of sesame oil then fry the bacon until just starting to brown then add all the other veggies and stir fry for 1 minute.
Pour in the cooked rice, soy sauce and Worcester sauce and stir until all combined, at the last minute stir in the chopped omelette and serve.
