Ingredients
5 eggs
2 medium potatoes, thinly sliced
3 anchovy fillets
150g button mushroom, sliced
100g grated havarti cheese
Salt and pepper
300ml milk
2 tbsp chopped parsley
Splash of olive oil
Salt and pepper
Method
Whisk the eggs and milk together until smooth, then add the chopped parsley and season with salt and pepper.
Heat an oven proof fry pan and pour in a splash of olive oil, the anchovy fillets and a small amount of the oil that the anchovies are in then tumble in the mushrooms and fry until just starting to brown.
Pour in the egg mixture then arrange the sliced potatoes around top of the egg mixture and sprinkle over the cheese then place the pan into an oven, pre-heated to 200oC for about 20 minutes or until the top is browned and serve.
