Ingredients
2 John Dory fillets
4 figs
200g coats cheese
Balsamic glaze
3 types of micro herbs
Method
Take the John Dory fillets and separate into 2 smaller fillets (John dory just pulls apart into smaller fillets.)
Cut the stalk off of the figs to give yourself a flat top.
Wrap 2 fillets of fish around each fig and secure with a toothpick then place a slice of goat’s cheese on top of each one.
Place the wrapped figs onto a flat grill and cook for about 5 minutes, the fish will turn white and the figs will bubble a little when they are cooked.
Serve with a garnish of micro herbs scattered on the plate and a swirl of balsamic glaze.
