Green Capsicum Masala

Ingredients

 
3 green capsicums, cleaned and cut into 5 cm cubes
2 medium potatoes, cut into 5 cm cubes
3 onions, 2 finely chopped, 1 cut into 5 cm cubes
2 cloves of garlic
10 cm knob of ginger, peeled and chopped
1 green chilli
1 tomato
100g cashew nuts
1 tsp chilli powder
½ tsp ground turmeric
½ tsp garam masala
½ tsp cumin seeds
1 tsp ground coriander seed
1 fresh mango chopped to 5 cm cubes
4 tbsp olive oil
 

Method

 
Place the finely chopped onions, garlic, ginger, green chilli, cashew nuts, chilli powder, turmeric, garam masala, cumin seeds and ground coriander into your food processor and blend to a smooth paste
 
Heat a large fry pan and add half the olive oil then stir fry the capsicums and remaining chunky onions for 3-5 minutes then remove from the pan and set aside.
 
Re-heat the pan, add the rest of the olive oil and fry the spice paste for 2-3 minutes then add the potatoes and just cover with cold water, cook for about 10 minutes or until the potatoes are nice and soft.
 
Stir through the fried capsicums and onions then cook for 3-5 minutes then stir through the chopped mango just before serving.
