Hash Browns

Ingredients

 
4 medium potatoes, grated
1 brown onion, finely chopped
1 tbsp chopped fresh parsley
1 egg
2 tbsp freshly grated Parmesan
Salt and pepper


Method

 
Place all ingredients into a bowl and thoroughly mix until all combined.
 
Heat a fry pan add a splash of olive oil and place a couple of tbsp of potato mix in and fry on each side until crispy, then place into a pre-heated oven at 200oC for ten minutes and serve.
