Ingredients
4 medium sized Pontiac potatoes
4 slices of ham
2 tomatoes
150g grated cheese
Splash of olive oil
50g un-salted butter
Method
Bake the potatoes @ 200oC for about 1 hour
Heat a fry pan, add a splash of olive oil and fry the ham until crispy then add the tomatoes and toss to combine.
Once the potato is cooked cut in half, add a knob of butter, top with the crispy ham and tomato and a sprinkle of cheese and serve.
