Jamberoo Fruity Blue Claws

Ingredients

 
12 small yabbies
1 stick of celery
1 large clove of garlic
1 stick of celery, finely diced
¼ cucumber, finely diced
½ Spanish onion, finely diced
½ tomato, finely diced
½ green capsicum, finely diced
3 mandarins, segmented, chopped
Salt and pepper
Splash of olive oil
Squeeze of lime juice
 

Method

 
Place 1 stick of celery and a large clove of garlic into a large pot of boiling water then tumble in the yabbies and bring back to a boil for 3 minutes.
 
Strain the yabbies and allow to cool (also remove the garlic and finely chop it for the salad.) Then peel and de-vein the yabbies.
 
Toss together all the salad ingredients, chop half the yabbies into quarters and add them to the salad, pour over a good splash of olive oil a dash of salt and pepper and serve on a bed of watercress garnished with whole yabby tails.
