Ingredients
2 lamb backstraps
4 tbsp jerk mix
8 slices of cappocolo
Splash of olive oil.
Method
Smear the lamb with the “Jerk” mixture, then wrap with cappocolo.
Heat an oven proof fry pan and add a splash of olive oil, seal the lamb on one side then place into an oven pre-heated to 250oc for 10-15 minutes depending on your taste (I like mine rare, 8-10 minutes,)
Carve and serve.
