Ingredients
¼ bunch each of basil, chive, parsley, coriander and Dill
100ml extra virgin olive oil
2 sheets short crust pastry
100g grated mozzarella
Method
Place all the herbs into your food processor and blend until smooth, then pour in the olive oil and blend until combined.
Cut the pastry into 4, spread a tbsp of magic herb on top then sprinkle with the cheese.
Bake in a pre-heated oven at 200oC for 8-10 minutes or until the pastry is golden brown.
