Mixed Fruit Cassata

Ingredients

 
1 tin of mixed fruit salad
Grated zest of 1 orange
Grated zest of 1 lime
1 litre of vanilla ice cream
 

Method

 
Drain the fruit salad mix of all it’s syrup then mix through the orange and lime zest.
 
Take the ice cream from the freezer and spoon into your food mixer, tumble in the fruit salad and mix on a low speed until the fruit is thoroughly mixed through the ice cream.
 
Press the fruited ice cream into a loaf tin and back into the freezer for at least 2 hours.
 
Remove from the freezer just as you are about to serve and slice into 5 cm slices and serve with hot chocolate sauce.
 
 
Hot chocolate sauce.
 

Ingredients

 
200g of good cooking chocolate
300ml cream
 

Method

 
Place the broken up chocolate and cream into a saucepan and gently heat until a smooth sauce is achieved.
