Ingredients
1 can Fruit salad
3 eggs
100g breadcrumbs
100g caster sugar
Small pinch ground nutmeg
2 sheets puff pastry
2 tbsp raw brown sugar
Method
Thoroughly mix together 2 of the eggs, caster sugar, fruit salad and bread crumbs.
Cut one of the pastry sheets in half and join it (using the third egg as egg wash) to the whole piece, then cut the other half into 1 cm wide strips.
Spread the fruity egg mix onto the pastry, covering about half the surface then roll the pastry up to encase the mix and form a roll
Place the rolled pastry onto a lined baking tray and liberally brush with egg wash, then place the pastry strips on top in a criss-cross pattern, egg wash again and sprinkle with sugar.
Bake in a pre-heated oven at 190oC for about 35-45 minutes.
Slice and serve.
