Ingredients
500g potato chats
750g sweet potato, peeled and cut into 5 cm cubes
2 carrots, cut into 5 cm cubes
2 sticks of celery, roughly chopped
2 long red chilli, roughly chopped
4 tbsp curry powder
50ml vegetable oil
1-2 litres of water
100g green beans, sliced
Method
Mix together the curry powder, oil and about 50 ml of water until a smooth paste is formed, then in a hot wok fry the curry paste for 3-5 minutes.
Toss in the potatoes, sweet potato, celery, carrots and chilli and stir fry until they are all coated with curry paste, then pour in the water, bring to a boil and simmer for 45 minutes until the potatoes are soft and starting to break down (add more water if necessary during the cooking, but make sure the curry is not too saucy when served.)
Serve the curry with plain boiled rice.
