Ingredients
4 large flat mushrooms
4 finely chopped spring onions
1 clove of garlic, crushed
¼ bunch of sage
1 glass of white wine
200ml cream
Salt and pepper
2 tbsp olive oil
Method
Heat the oil in the pan and lightly sauté the mushrooms, before they start to colour add the onions, garlic and sage, then fry for 1 minute.
Pour in the wine and de-glaze the pan, pour in the cream and bring to a vigorous boil and reduce by half.
Season to taste and serve with your favorite pasta.
