Ingredients
1 tsp smoked paprika
2 cloves of garlic
Juice of 1 lemon
250g button mushrooms
20g butter
3 tbsp olive oil
Method
Heat the olive oil and butter in pan and add the mushrooms, fry until just soft then add all the other ingredients.
Simmer for 5 minutes and serve

Ingredients
3 anchovy fillets
2 finely diced spring onions
100g smooth ricotta
½ French stick
200g quartered button mushrooms
¼ bunch curly parsley, finely chopped
2 tbsp olive oil
Method
Fry the mushrooms, anchovies, and spring onions for 3 minutes
Remove from the heat and stir through the ricotta and chopped parsley.
Serve on top of toasted bread slices.
