Ingredients
3 eggs – beaten
6 spring onions, chopped
2 long red chillies, chopped
½ tsp shrimp paste
2 cloves of garlic, chopped
250g green Prawns
1 Chicken Breast cut into strips
250g Beef, cut into strips
2 tbsp of peanut oil
500g cooked rice
1 tbsp sweet soy sauce
Crispy fried shallots
¼ Wombok, finely shredded
100g Beansprouts
1 crispy fried egg
Method
Heat a wok until very hot then add a splash of peanut oil and fry the chicken in batches, remove from the pan and set aside, then repeat the process with the beef and the prawns.
Re-heat the wok and add another splash of peanut oil then fry the 3 beaten eggs to form a large flat omelette, remove from the pan and set aside.
Re-heat the wok and fry the spring onions, chillies, garlic and shrimp paste, then add the rice, sweet soy sauce and return the beef, chicken and prawns to the pan, stir until all ingredients are incorporated then toss in the wombok and beansprouts and serve the Nasi Goreng in a large serving bowl.
Re-heat the wok and pour in 1 tbsp of peanut oil and fry the last egg until crispy around the edges, place the crispy fried egg on top of the Nasi Goreng and sprinkle with the fried shallots.
