Nut Crusted Chicken Breast

Ingredients

 
2 chicken breasts
200g mixed nuts
1 tbsp chopped parsley
1 tbsp chopped thyme
1 clove of crushed garlic
1 egg
4 tbsp olive oil
Salt and pepper
 

Method

 
Place the nuts into your food processor and pulse until a crumb texture is achieved, then add the chopped herbs, egg, garlic and half the olive oil and pulse until all combined.
 
Heat a fry pan add the rest of the olive oil, baste the chicken breasts with salt and pepper and fry until sealed on both sides.
 
Pres the nut crust onto the top of each chicken breast and bake in an oven pre-heated to 200oC for 12-15 minutes.
 
Slice and serve with a crisp green salad.
