Ingredients
4 medium sized banana’s (mashed)
350g self raising flour
150g melted butter
200g caster sugar
2 eggs
½ tsp baking powder
1 tsp vanilla essence
200g mixed nuts
Method
In you food mixer combine the mashed bananas, butter, eggs, sugar and vanilla and whisk on high speed for 1 minute, then add 75% of the nuts (lightly crushed)
Fold in the flour and baking powder and thoroughly mix.
Pour the batter into a greased loaf tin sprinkle the top with the remaining nuts and bake at 180oC for about 1 hour.
Allow to cool before slicing.
