Oaten Sticky Date Cake

Ingredients

 
500g Dates
300ml water
200g Instant Oats
200g Brown sugar
4 Eggs
A pinch of nutmeg
300g Self raising flour
Baking powder
 

Method

 
Place the dates into a saucepan with the water and a pinch of baking powder, bring to a boil and simmer for 10-15 minutes.
 
In a mixer cream together the eggs, a pinch of baking powder and half the sugar with a pinch of nutmeg.
 
Once the dates have simmered and cooled a little carefully remove the stones and pour the mixture into the egg and sugar mix while beating, then fold in the oats and flour to form a batter (adding some of the date liquor, @ 100ml.)
 
Pour the batter into your cake tin and bake at 180oC for 45-55 minutes.
 
Serve warm with a caramel sauce.
