6 chump chops
extra virgin olive oil
1 brown onion
1 tbsp honey
1 clove of garlic
2 spring onions
bunch of dill
Sprinkle oregano over 6 chump chops. Add to a hot pan with a splash of extra virgin olive oil and seal, chop 1 brown onion into rings and place into an oven tray, slide the sealed chump chops into the oven tray on top of the onions, mpour 1 litre of liquid chicken stock over the chops and onions , slide into a pre heated oven at 200 degrees for 40 minutes.
Carrot and Honey Rosti
Grate 1 carrot into a mixing bowl add 1 tbsp honey, 1 egg and mix until combined, then sprinkle 2 tbsp plain flour and mix.
Grate 1 clove of garlic, 1 potato and 1 egg and mix until combined and 2 tbsp of flour and mix.
Chop the whites of 2 spring onions and the fronds of a bunch of dill finely add to a mixing bowl and grate a zucchini, add an egg and mix, then add 1 tbsp of flour and mix.
Spray an oven tray with canola oil
Press the Rosti mix into the oven tray and place into the oven for 15 minutes.
