Ingredients
1 Chicken breast
150g plain flour
Eggwash (3 eggs, 150 ml of milk, this will be used for all my snitzels)
1 ½ cup of Panko breadcrumbs
¼ lemon Zest
Method
Place the lemon zest into the breadcrumbs, add a sprinkle of salt and pepper and mix well, then passs the chicken through the flour egg and breadcrumbs.
Shallow fry the panko crumbed chicken breast in hot olive oil until just crispy on 1 side then turn it over and place the fry pan in an oven at 200oC for 10 minutes
