Ingredients
50g button mushrooms, cut into quarters
1 carrot, cut into 5cm dice
1 zucchini, cut into 5cm dice
1 yellow squash, cut into 5cm dice
4 -6 tbsp Napoli sauce
60g fettucine cooked as per pack instructions
Splash of extra virgin olive oil
Method
Heat a fry pan, add a splash of olive oil and tumble in all the vegetables, stir fry the veggies for 3-5 minutes (just soften slightly.)
Pour in the Napoli sauce and bring to a gentle simmer then add the cooked pasta (along with 2 tbsp of pasta cooking water for a little bit more sauce.) serve immediately.
