Pastry Rolled Meat Loaf

Ingredients

 
500g minced beef
1 brown onion finely diced
1 clove of crushed garlic
2 tbsp tomato paste
1 grated carrot
2 sheets of short crust pastry
2 eggs
Salt and pepper
 

Method

 
Massage together the mince, onion, garlic, carrot, 1 egg and tomato paste until all combined.
 
Separate the mixture into 2 and roll each one up in a sheet of pastry, sealing the ends and side with egg wash (using second egg,) then brush the outside with egg wash, place on a lined baking tray and bake at 180oC for 15-20 minutes or until golden brown all over.
 
Slice and serve.
