Ingredients
6 medium potatoes, peeled and cut into 5 cm cubes
½ brown onion, finely chopped
2 dill fronds
½ cup mint leaves
½ a cup of parsley leaves
4 tbsp mayonnaise
Method
Place the potatoes into a large pot and just cover with cold water, bring to a boil, place on a tight fitting lid and allow to sit in the hot water for 10-15 minutes (the potatoes should be just soft enough to insert a skewer in easily, yet still hold together.)
Place the onions, and herbs into a large bowl and massage together, this will release the oils from the herbs and soften the onion.
Drain the potatoes well and place on top of the herb and onion mixture while they are still warm then dress with the mayonnaise and stir well and serve.
