Ingredients
6 Lemons, washed, dried and cut into quarters
7-10 tbsp salt (rock or iodised)
Juice of 2 lemons
Preserving jar.
Method
Place the cut lemons into your jar with the salt and lemon juice, making sure it is well distributed and the lemons are covered.
Seal the jar and place into a dark cupboard for at least 2 months before using.
(The preserved lemons need to be out of daylight or they are likely to oxidize.)
