Ingredients
1 Spanish onion, finely chopped
1 large clove of garlic, crushed
¼ tsp of ground cinnamon
375g red kidney beans (boiled for 1 hour until softened)
1 tbsp Worcester sauce
150 ml cream
Splash of olive oil
Method
Heat a pan and add a splash of olive oil then tumble in the onions and garlic and cook until just starting to brown, then sprinkle in the cinnamon.
Pour in the Worcester sauce and add the cooked red kidney beans, then stir and mash the beans while still frying (continue to mash, stir and scrape any bits stuck to the bottom of the pan until the beans are 75% mashed.)
Stir in the cream and cook for a further 5 minutes, then serve in a bowl with a drizzle of olive oil and a sprinkle of chopped parsley.
