Ingredients
350g S/R flour
250g brown sugar
1 egg
½ tsp vanilla paste
150ml peanut oil
250ml milk
500g rhubarb, chopped
150g mixed nuts, roughly chopped
100g melted butter
100g brown sugar
Method
Place 50g melted butter in a saucepan with the rhubarb and gently sweat (with a lid) until soft, stir through chopped nuts
In a large bowl combine the flour, 250g sugar, egg, vanilla, oil and milk and mix until all incorporated
Mix through the nuts and rhubarb then pour into loaf tins
Mix together the 2nd half of melted butter and 100g brown sugar then sprinkle on top.
Bake @ 180º for 40-50 minutes
