Ingredients
1 pack of original corn chips
150g melted butter
4 slices of bacon finely diced
½ Spanish onion, finely diced
1 clove of garlic, crushed
100g shredded cheddar
¼ cup finely chopped chives
Splash of olive oil
Method
In a hot fry pan add a splash of olive oil and fry the bacon and onion until they just start to brown, then add the garlic and remove the pan from the heat.
Allow the bacon to cool then pour into a large mixing bowl add the chopped chives, cheese and corn chips and mix until all combined.
Pour in the butter and mix well then fill cup cake cases with the mixture and place in the fridge until set (at least 2 hours)
