Sculpted Watermelon Salad

Ingredients

 
1 whole watermelon
2 red apples
2 green apples
½ a pineapple
2 kiwi
250g boysenberry (frozen)
1 passion fruit
 

Method

 
Cut a slice off the bottom of the watermelon so it will sit flat.
 
“Van Dyke” (cut in a zigzag pattern) the water melon then scoop out 75% of the flesh, chop and set aside in a large bowl.
 
Chop all the other fruit (except boysenberry) and place in the bowl with the watermelon.
 
Using sharp knife (or crenulator) carve a design or message (Happy Birthday) into the skin of the watermelon.
 
Toss the semi defrosted berries into the rest of the fruit and fill the carved melon and serve.
